which internal linking method is best ?

Internal linking is about optimizing the links on your website. For example, if you had a link about casino reviews, and the link had the anchor text "click here", it would not be properly optimized. Naming that page something like "online casino reviews" would be much more effective.

I'd suggest naming your links as accurately as possible so it sounds natural. You don't want to name each link "online casinos something" to rank better in search engines for online casinos (looks very unnatural that way).

If someone wanted to risk over optimizing their links, each link would have their main keywords in it. E.g. Online Casino Reviews, Online Casino Games, Best Online Casinos, etc Even if this did work, its really not worth the risk. You may even get done for spam if a competitor reports you.

The best kind of inner-linking is to create menu that runs through all of the pages on your site. Some articles should include links to your homepage and category pages. You can use any kind of anchors there. Yet, if you wanna rank for certain keywords, use them at least in 50% of your inner links(as well as external links).

I agree. It's very easy to "over optimise" - I received a 6 month penalty once and I'm 99% sure it was for exactly that.

Wow, 6 months is a harsh penalty! Its best to have more than one website to carry out these kind of tests, to avoid the possibility of your main website getting penalized.

It was on a low traffic site thankfully :)

I totally agree with you. You have to have 3-4 sites for your experiments. Otherwise youlose money and time.

Absolutely. I don't know how some people can have only 1 website. It would be so scary if it ever went backwards, or got penalised (especially if it was your main source of income).
